Whoops... thats for excluding tables, not databases. Try:
for DB in $(echo "show databases" | mysql -u <username> -p'<password>' | grep -v Database | grep -v <some_db_to_exclude>)
do
mysqldump -u <username> -p'<password>' ${DB}
done
Same rules apply.
